Salted anchovies


Among the best-known traditional products of the municipality of Lavagna and wider Liguria, the salted anchovies of the Ligurian Sea boast a PGI denomination and are the perfect synthesis of the saltiness of the sea, the specific shape of our coast and the low temperatures here. Lavagna is home to the only Ligurian business with a PGI-certified salting process, synonymous with product quality and traceability.


Anchovies are a symbol of our sea and can be eaten with lemon, stewed, stuffed or fried. Don't miss the salted anchovies, which you can enjoy on a classic crouton with butter and anchovies, as a delicious snack or appetiser, dressed in Ligurian style, with oil and parsley, or in reinterpretations of classic recipes such as orecchiette with rapini.

Lavagnino cabbage


Brassica oleracea var. capitata, more commonly known as the Lavagnino cabbage, is a typical product of Lavagna, popular in our region since antiquity. Bigger than the Savoy and with a longer form, it has clear green leaves and smaller red ones, and may be classified as category I, II or III depending on maturation. It is usually eaten cooked, often with pasta, as it is very soft and tasty. Featuring on many seasonal menus at our restaurants and agri-tourisms, the Lavagnino cabbage even has an event dedicated to it in November: "Sono tutti cavoli nostri" (a pun; literally "They're all our cabbages" but idiomatically "It's all our business").

Farinata


Among the classic dishes of Liguria is farinata, a cake made of chickpea flour mixed with extra-virgin olive oil. In many trattorias in the Lavagna area, farinata is cooked in ancient wood-burning ovens and served boiling hot!


It is then offered as an appetiser or main dish, seasoned with pepper, onions or soft cheese, but we suggest you try it even on its own; its deliciousness will surprise you!

Focaccia Genovese


Walking through the centre of Lavagna you will be overwhelmed by the irresistible scent of freshly baked focaccia from our bakers in every corner of the city. A must for visitors and locals is breakfast with cappuccino and focaccia. Even restaurateurs often offer their customers their own version of focaccia alla genovese.

Lavagnina olives


For that fruitiness it gives, for that slightly spicy tinge, with pine nut and artichoke hints and the sweetness that makes Ligurian oil so recognisable, for the intense colour that only this olive can give. Lavagnina is a cornerstone in Riviera Ligure and Riviera di Levante PDO extra virgin olive oil, the production specification for which accords it a prominent place. It's not difficult to arrive at one of our restaurants and find some diner intent on pouring some of our oil into the dish and scooping it up with a piece of focaccia.

Pesto


Our pasta makers are champions of pesto, bringing nuance to it thanks to the elements they add (local products of absolute quality), making it with oil and basil grown on the Entella plain. Restaurateurs themselves use this sauce in their kitchens as a perfect condiment for white or chestnut flour trofie (pasta), potato gnocchi, baked lasagne or simple trenette (pasta) with green beans and potatoes. A true delight.

Torta dei Fieschi


The Torta dei Fieschi (Fieschi cake) evokes the wedding in 1230 of Opizzo Fiesco, condottiere and feudal lord, and Bianca de’ Bianchi from Siena, heiress to a great banking family. It was a "political" wedding as was then traditional, but also a love story, which is how the people of Lavagna like to remember it. In the shadow of the gigantic cake, the civil ceremony takes place: the cutting of the wedding cake, courtly fights, flag and fire games, music and dances in honour of the newlyweds. Above all, the cake electrifies the public, because it is only with an amusing game, the search for a soulmate among the thousands of spectators in the square, that a slice of the cake can be obtained. To be enjoyed – and herein lies the secret of the party's decades-long success – strictly in couples, after exchanging a kiss.

Stuffed vegetables


One of the most classic dishes of this area, which cannot go amiss in any home or traditional restaurant in Lavagna: stuffed vegetables, be they courgettes, aubergines, onions or tomatoes. They can be eaten as a second course, accompanied by a side of salad, but also as an appetiser, to tickle the palate before a lunch or dinner of classic Genoese specialities. Every day, the Piana dell'Entella provides the shops and stalls of Lavagna with freshly picked vegetables which, when stuffed, take on an incredible flavour and taste.
