Mar Ligure salted anchovies are protected by a PGI (Protected Geographical Indication) denomination unique in Italy. The prestige and uniqueness of PGI anchovies in Ligurian sea salt is a reflection of the particular conformation of the coast, the narrow temperature range in this area, the marked salinity of our sea and our time-honoured fishing, processing and preservation techniques. Lavagna can boast the only organisation in Liguria to have a certified PGI salting process, meaning product quality and traceability. The emblem of our sea, the anchovy has a great many uses in the kitchen (marinated in lemon juice, in a guazzetto (sauce), stuffed or fried) but when salted it has a genuinely unique flavour. Salted anchovies alla ligure: rinse and dry your anchovies on a vertical cutting board. Lay them out in a serving dish with olive oil (“lavagnino” of course), oregano and garlic and leave to marinate for a few minutes before serving, preferably with some excellent Ligurian focaccia.
